Crowd Pleasin' Mexican Pasta Salad

In honor of Labor Day Weekend, I am sharing one of my favorite pasta salad recipes. Make this, and seriously- I promise- you will be the hit of the BBQ. There are a few steps, but nothing that needs to be cooked (besides the pasta) and that makes me happy in this 90+ degree N.C. heat!




This recipe will easily feed a large BBQ of 15-20 people as a side dish:

Ingredients:
16oz of Orzo Pasta
2 Red Peppers
2 Green Peppers
2 Cans of Corn (strained)
2 Cans of Black Beans (rinsed)
2 Cans of Diced Tomatoes (I use Rotel with green chilis)
3 Avacados
1/4 Cup Hot Sauce (whatever is your fav - add less or more depending on your heat tolerance)
1/4-1/2 cup Olive Oil
Lime Juice
Cumin
Cayenne Pepper
Salt
Pepper
Garlic Powder
Fresh Cilantro (optional)

Boil orzo in salted water until al dente
Strain & cool pasta (add and mix in olive oil right away to keep it from sticking together in clump)
Dice Peppers into 1/4-1/2 inch squares
Add corn, diced tomatoes (rotel), peppers and black beans to pasta (leave the avacados out!)
Add all spices and liquids with a generous amount of lime to the cooled orzo pasta (I would do this little by little - stir everything together and then add more to your liking). Mix well to incorporate flavors.

** Be aware that once this salad has time to sit it does absorb a lot of the liquid and flavors - I usually make it on the spicy side - because once it has been chilled it tends to mellow out slightly**

Once you have the salad flavored to your liking, let it chill for an hour or two in the fridge.

Just before your BBQ, mix the pasta salad well. Take a taste. Add more seasoning if needed (I find it always needs a little bit more lime - it really puts it over the edge)

Dice your avacados and place them on top of the salad (do not mix them in). Squeeze lime on the avacados (this will help to keep them from browning).

Lastly,  add a lime wedge or wheel and a sprig of cilantro to the top. Add some Cayenne, salt and pepper for extra color on the lime wedge and avacados.

A Very Good Place to Start

Welcome! Thank you for stopping by to read my very first blog post. I have been toying around with the idea of starting this blog for a while now and am very excited to join the blogging world.

A little about me and what you can expect here at No Place Lyke Home...

I am a 24-year-old newlywed and live in Charlotte, N.C. with my husband, Jake. I am hoping to do a more detailed post on our love story but, Jake and I have been dating since we were in the 7th grade (braces and all) living in Upstate New York.

We lived long distance during college for four years, up until two years ago when we packed up after graduation and made the move from the Midwest to the Southeast. Jake put a ring on it, we bought a house and have been working hard to make our very bare and builder white house into a home (before & after house pics coming soon – get excited).

On April 16th, 2011 Jake made an honest woman out of me, and after 11 years of dating (yes, I know that is crazy talk for a 24-year-old) I finally became his wife.

Beyond being a newlywed, I am also an "Auntie" to our 2.5-year-old niece, Adelaide (she is the blue eyed beauty pictured below). We have another niece or nephew due to arrive this fall! Expect lots of niece/nephew pics as I am head-over-heels in love with being an aunt.

Since moving into our first home, I have discovered my true passion for decorating, entertaining, cooking and crafting. Although, I have had some serious failures; including a badly burnt french baguette and a really fugly chair purchase (no seriously, r-e-a-l-l-y fugs) I think I am starting to get the hang of things.

My goal for this little blog is to document the start of our lives together, motivate myself to be more adventurous in the kitchen and hopefully entertain you all with tales from my very blessed and often messy life. I plan on sharing recipes, decor tips, pretty pictures, DIY projects and random anecdotes about life as a young wife.

I hope that you will come along with me as I try to find my sea legs as a wife.
